The idea of Billingsgate Brewing Co. was born in the Summer of 2009. It was initially intended to satiate and indulge a growing desire for good beer. Amongst many beer cooled summer grilling sessions on Brooklyn rooftops, in backyards, and out in Prospect Park, it was discussed at length how great it would be to brew our own beer. Good intentions stumbled upon a rabbit hole of discovery into the brewing processes that create fantastic brew. Both founders share a curiosity that seeks the ‘how’ and ‘why’ behind many popular and lost beer styles. Those challenging styles and brewing techniques were perfect territory for optimistic, and some might say naive, homebrewers to venture forth unto. A few batches in and we’ve exceeded our earliest expectations. Our beers have turned out to be wonderfully complex and indicative to the styles we are honoring. It has also been a learning experience of what to do to achieve a particular flavor, aroma, feel and why. The story is still developing and Billingsgate is discovering what type of brewery it is to become, and we’d like you enjoy our musing on beer and share your thoughts.
